Shepherds Pie with sweet potato

This was the recipe that introduced me to thyme and it created a long love affair. It’s a simple recipe that has great throwbacks to my Scottish roots.

Serves: 6


  • Lamb Mince – 500g
  • Onions x 5
  • Shallots x 2
  • Garlic cloves x 3
  • Beef stock x 2 cups
  • Worcester sauce – 2 tablespoons
  • Red wine x 1 cup
  • Thyme – 1/4 cup
  • Coconut oil – 1 tablespoon
  • Salt and pepper to taste
  • Sweet Potato


  1. Heat the oil in a large pan and add the lamb mince
  2. Brown the mince, and then remove from the pan, and drain out half the oil
  3. Add the onions, shallots, thyme and garlic to the pan and fry until the onions are translucent
  4. Add the mince back into the pan and add the red wine
  5. Turn the heat up to high for a couple of minutes to burn the alcohol off
  6. Turn the heat back to medium and add the beef stock and worcester sauce
  7. Leave the pan cooking for a further 60mins
  8. Peel your sweet potato, cut and boil for 15mins until you can easily spear with a knife
  9. Drain the sweet potato, add back into your pot and add a little water to the mix before mashing
  10. Serve up the mix and add a little fresh thyme to the top for garnish
