Salmon, brown rice & veggies

I’m not averse to the odd thing from a packet in the name of convenience, and this salmon comes up trumps every-time. Add it to some cooked brown rice and veggies for an easy and quick lunch! If you want it to be strict paleo (rather than my version), swap out the brown rice for cauliflower rice.

Total Prep Time: 5mins

Serves: 1

Ingredients:

  • Safcol salmon – mild red chili
  • Brown rice – 125g
  • Carrots x 0.5
  • Red pepper – chopped handful
  • Red cabbage – 0.5 cup, chopped
  • Button cup mushrooms x 3
  • Avocado x 0.25
  • Coconut oil

Method:

  1. Heat 1 teaspoon of coconut oil in a pan
  2. Chop up the carrot & mushrooms & put into the pan for a couple of minutes
  3. Add the pre-cooked brown rice (I like to make a batch of this once a week), stir and leave for 3-4mins
  4. Add the salmon from the pouch to heat it through
  5. Salt & pepper the whole mixture before transferring to a bowl to serve
  6. Slice the avocado & put on top
  7. Salt & pepper in the dish and you’re ready to serve
