Potato Salad with Bacon

An easy party food that is a bit of a throwback to the 90s. Make sure you use good quality potatoes so that they turn out nice and firm when cooled.

  • Potatoes (dutch cream are the best) – 750g
  • Bacon – 2 rashers
  • Spring Onions (or cibies if you’re Scottish) – 1/4 cup
  • Mayonnaise – 3 tablespoons
  • Lemon Rind
  • Lemon Juice – 1/4
  • Salt and Pepper to taste



  1. Start by peeling your potatoes and making sure there are no brown bits
  2. Cut the potatoes into equal sized bites
  3. Put the potatoes on to boil
  4. Chop up the spring onion and set it to one side
  5. Heat a tiny amount of coconut oil and flash fry the bacon until it’s nice and crispy
  6. Cut the bacon up and pat it down with kitchen paper to take the excess oil away
  7. Test your potatoes progress at the 20minute mark and don’t remove them from the pan until it is easy to slice them with a knife
  8. When the potatoes are soft, remove them from the pan, drain them and run cold water over them, setting them aside to cool
  9. When cooled add your potatoes to a big bowl, pour in the spring onion and bacon, squeeze over the lemon juice and add the lemon rind
  10. Mix it all together with the mayonnaise and salt and pepper, then put it in the fridge to cool for adding to salads and dinners in future
