Laotian Style Chicken Basil and Coconut Milk

This is a sweet dinner treat that is quick to prepare and very comforting if you’re not well. It’s not too spicy and the coconut milk and basil work amazingly well together. I only had kale on hand so served it with that, but I’d recommend baby bok choy instead.

  • Chicken Thigh (de-boned) x 1
  • Brown Onion x 0.5
  • Long red chilli (half)
  • Garlic – 1 clove
  • Coconut Milk – 1 cup
  • Water – 1/10 cup
  • Baby Bok Choy
  • Fresh Thai Basil – 1 cup
  • Coconut Oil – 1 tablespoon
  • Fish sauce – 1 tablespoon
  • Sugar – pinch (optional)



  1. Chop up your onion, garlic and chilli
  2. Put a large pan on the hob and add the coconut oil, putting the heat on medium
  3. Fry the onion, garlic and chilli until soft and the onions are translucent
  4. Slice the chicken thigh into equal sized pieces and add them to the pan
  5. Add half the fresh basil to the pan
  6. Add the fish sauce and sugar and stir
  7. Chop the baby bok choy roughly and slice the carrot thinly
  8. Add the bok choy and carrot to the pan
  9. Pour in the coconut milk and water and add a lid to the pan leaving it for around 20mins to make sure that the chicken thigh cooks through
  10. Test the flavour and you’re done!
